The best is miami
You will be using the Convertible Peso CUC which is for tourists. You cannot buy them outside Cuba nor do they have any value outside Cuba. You can buy them upon your arrival either at the airport or your resort. Check the site below for the value.

After ten visits to Cuba, my favorite resort, I’ve been there 5 times and judging from the number of repeat visiters I have met there gives high marks is Sol Melia Rio Lunas y Mares.. You fly into Holguin and it is about an hour by comfortable bus to Guardalavaca where the resorts are located. Luna y Mares is fantastic, a beautiful white sand powder beach, good dining, excellent friendly staff and lots to do that is included at no extra cost. Check the sites below for more info and check trip advisor for the reviews by other tourists. wherever you go rest assured you wil have a wonderful time and please check the site below for what you can take as gifts to help our Cuban friends.

As Riki mentions, the currency is the CUC. That is pegged to the US dollar, so its relation to the Canadian dollar depends solely on how the US and Canadian currencies are moving.
Everyone has different favourites - it depends what you mean by "best". The newer resorts at the end of the Varadero peninsula, and at Santa Maria are apparantly some of the highest quality (and so most expensive).
CUC as previously stated.. try to go in an all inclusive trip. Meals outside the hotel could be expensive at times.. try to get local advise of "paladars", those are privately owned restaurants…
As Riki said, the CUC peso is tied to the US dollar, Cuba also has their local currency (peso) but it is not used by tourists, all your transactions will be in CUC.
My recommendation for resorts is to check into a five star hotel in Cuba, 4 stars are good but the quality of the food may not be to your liking. I have stayed at the four star hotels in Cuba (Sol Rio, Blas) and have really enjoyed my stay but if I was going on my honeymoon I would definately play it safe and stay at a hotel where I know that the accomandations and food is excellent. Rio Oro, Playa Pesquero, the resorts on Santa Maria are excellent. I have visited Rio and Playa and my neighbors just came back from Santa Maria and they loved it.
I know that you will love Cuba and its people, the island is beautiful and so undeveloped! Make sure to get out of the resort and tour around - we rented a moped for a day and it was my favourite day of our entire trip…have fun and good luck with the wedding!
Riki gave you the right info about the currency. Just to add, you can also bring credit cards that are not US-based for any big purchases or necessary cash advances if it would help.
You’ve been given great recommendations for resorts. I’ll add in Cayo Coco. It is another gorgeous part of Cuba…a little secluded and very romantic, (only 15 drive from the airport) but easy to travel to the mainland. The water is crystal clear turquoise and the sand is soft and powder white.

Tryp Cayo Coco is a fantastic resort and many have enjoyed their honeymoon there. The setup and layout design of the whole resort is beautiful and the staff are amazing.

However, Meliá Cayo Coco is also another resort that is for adults only and might even be more suitable for your wants.

The best resorts are the Sol Melia hotels. Make sure you book hotels that are no less than a 4* to ensure quality of food, service, accomodations, etc.
Have a happy honeymoon!
